Sweet Potato, Bacon and Egg Salad

This year, I have decided I must try harder to bond with lunch. Working from home, has resulted in lunch often passing me by, or a nasty old cuppa sup making it on to my desk. Bad, bad, bad.

Today’s ‘must try harder lunch’ was sweet potato, bacon and egg salad. It was rather tasty, even though I had to miss a key ingredient out. The dodgy Sainsburys that I went to decided not to stock dill when I needed it most. So, sadly my bowl went without. Yours will unquestionably taste much nicer with.

Sweet Potato, Bacon and Egg Salad

Serves 2

1 medium sweet potato diced
2 eggs
3 rashes of bacon, diced using meat only (or use low fat)
1tbs oil
3tbs dill, finely chopped
2tbs mayonnaise (A little less if you like)
2tbs lemon juice


Boil eggs in water for 4-6minutes. Peel and dice eggs when cool.

Place a frying pan on medium-high heat, add olive oil, bacon and potatoes fry until browned and potato has fully cooked.

In a small bowl, combine dill, mayonnaise and lemon juice.

Place eggs, sweet potato, bacon and mayonnaise sauce into a medium bowls. Combine well.

Serve and enjoy. Eat hot or cold.
