Salted Caramel Mug Cake

Last night I decided to celebrate the purchase of my new treadmill by adding an excessive few pounds to my rear end. If I’m going to tread it off, I may as well enjoy a bit of the yummy stuff…Right?

Whilst browsing Pinterest, I came across an image of a cake in a mug and naturally this lead to further investigation. Turns out, this cake in a mug can be made in about five minutes, is packed full of chocolate and takes just 50 seconds to cook in the microwave…Fabulous!

I’d like to say this cake is fool proof – It certainly should be, but on writing this post, I have just realised that I strayed from the recipe slightly. I decided to mix enough for two in a bowl, but only added enough sugar for one. We didn’t even notice when we ate it, so I’d say there’s room for movement on the sugar levels. I also opted to use Taste the Difference Salted Caramel Chocolates, because that’s the best we could come up with at 9pm on a Friday evening.

This is certainly a recipe that can be altered. Throw anything you like in the middle and see what happens… Let me know how it goes!

This is how it should really look…

Salted Caramel Mug Cake
What you’ll need: {makes 1 mug cake}

4 tablespoons all purpose flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg – beaten
3 tablespoons skim milk
1 tablespoon vegetable oil
2 salted caramels

What to do:

1. Into a small bowl add: flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil. Mix to combine.

2. Pour mixture into a regular sized mug. Drop caramels into center of mixture one at a time.

3. Microwave on high for one minute and 30 seconds. If needed {if cake batter is still gooey}, microwave on high for up to an additional 30 seconds.
